HAWKES MISSION: CIDER SALVAGED
Hawkes is a city cidery, based in Central London. We are one of the fastest growing cideries in the UK. Sitting on the Bermondsey beer mile, we are all about cider, and salvaging waste products. Never from concentrate, we use upcycled, unloved apples rejected by supermarkets, and every year we scoop up the city’s windfall apples from urban apple trees for our flagship cider, urban orchard.
ABOUT THE ROLE
As a cidermaker, you’ll be responsible for both creative small batch product developments, as well as safeguarding quality and consistency of our core products. A cidermaker must understand all aspects of cider production including the pressing of fruit, fermentation process, testing of cider, packaging, hygiene and sanitation requirements.
The cider maker must ensure the production process meets all safety, HACCP and quality system requirements. Customer interaction/cidery tours are part of the job.
At Hawkes we have a small team. You’ll be reporting to the head of production, also working closely together with the taproom and marketing team. You’ll be representing Hawkes in the overall cidery industry.
RESPONSIBILITIES INCLUDE BUT NOT LIMITED TO:
Sourcing of raw materials
Managing supplier relationships
Product formulation / New Product Development
Operating the cidery operations
Quality assurance throughout the whole process (sensory, product specs, HACCP,…)
Leading of sensory sessions, within the team and with customers
Maintaining equipment / advising on new equipment
Leading cidermaking masterclasses
Participate in sales activities
One of the most important characteristics is that you are extremely passionate about apples, fruit and cidermaking. You love to talk about cider to customers, industry experts and company stakeholders.
2-5 years experience in the cider making industry
- To demonstrate knowledge of health and safety, food safety and hygiene standards and good working practices
- Experience in new product development and creative product design
Broad technical and mechanical knowledge
Good problem solving skills
Attention to detail – required for monitoring the production process, managing inventory, keeping hygiene standards, etc…
Excellent IT skills (word, excel, SAP,…)
Good communication skills
Continuous improvement mind set
Analytical thinking skills
Ability to work under pressure and prioritise
Full driving license required
Will also be considered
