Head Chef

What will I be responsible for?

This role is ideal for a creative Head Chef with strong management skills to lead our kitchen brigade for both of our restaurants at Drimsynie - the Rob Roy Lounge and La Rustica.  In addition you would have overall responsibility for the catering of special events for up to 220 seated guests in our function suite.

Building on our reputation for providing great food in a family environment, key responsibilities of the role include:

• Creating high quality dishes, cooked consistently and enthusiastically to a high level, including a menu of daily specials based on seasonality.

• Developing new products regularly and working with the Management Team for ongoing menu selection.

• Ensuring that the required preparation is undertaken and completed prior to each service.

• Maintaining standards in quality of food produced, food storage, stock control, food hygiene, staffing and wastage control.

Experienced Sous Chef

What will I be responsible for?

Working alongside our talented Head Chef, the successful Sous Chef will need to learn all the responsibilities needed to run a kitchen producing fresh quality good in a fast paced environment. With 2 restaurants at this location, we offer a varied menu with family appeal including an exciting range of daily specials. On a daily basis you will take responsibility for:

  • Controlling and managing food costs
  • Ordering stocks and completing stock takes
  • Organising rotas
  • Overseeing food quality
  • Managing large prep tasks
  • Contributing to dish creation

Chef De Partie

What will I be responsible for?

Working alongside the talented kitchen team, the successful Chef De Partie will take responsibility for producing fresh quality good in a fast paced environment. With 2 restaurants at this location, they offer a varied menu with family appeal including an exciting range of daily specials. On a daily basis you will take responsibility for:

• Preparing, cooking and presenting dishes within your speciality

• Managing and training any demi-chef de parties or commis working with you

• Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety

•  Monitoring portion and waste control to maintain profit margins

Head Chef

Who are we looking for?

To fully appreciate the scope of this role you’ll have previous experience at Head Chef level in a 3 or 4 star hotel, or a high street restaurant brand.  As a senior manager it’s important that you’re a confident communicator and can engage positively with our customers, suppliers and other stakeholders in the business. You’ll have demonstrable abilities in developing and improving food, food standards and the people you lead. Monitoring and improving costs and efficiencies will also be part of your skill portfolio.
