The Harris and Lewis Smokehouse is a newly completed salmon smokery located in Stornoway, Isle of Lewis, which blends modern technology with traditionally designed kilns and curing methods to produce a premium product for the global market. The Smokehouse only uses premium fish harvested from the pristine waters around the islands and treats them with the care and skill that such a high-quality food deserves.
The Isle of Lewis is the largest island of the world-renowned Outer Hebrides, off Scotland’s West Coast. As well as the stunning scenery, clear waters and abundant wildlife this area is regularly rated as being one of the best places to live in the whole of the UK. Stornoway is the major town in the islands and is well provided for in terms of services, facilities and transport links to the mainland.

We require an experienced and proactive Quality Controller to manage and drive forward all aspects of quality control, to ensure standards are met and appropriate corrective actions completed.
Providing and maintaining Quality Assurance and Quality Control systems and functions on site, this position involves carrying out quality monitoring and sampling within production operations in the smokery, measuring and recording to specific criteria and reporting results in clear format.
A varied and interesting role, with scope for development, this position carries the following integral responsibilities:
• Agreeing internal product specifications and providing feedback to the General Manager and Production Manager
• Resolving any customer complaints and implementing preventative measures
• Supporting the Production Manager in improving the overall operations of the smoker facility
• Ensuring that no non-conforming product leaves our site
• Helping lead external audits on the site in a Quality capacity
The Right Person
To be successful in this role, you will have some previous experience working with fresh food and smoking meat or fish in a Quality-based role. Ideally you will be educated to degree level in Food Science, Microbiology or a related discipline and you will hold HACCP and related accreditations. A background in product development is desirable.
